Biltong and Quinoa Veggie Bowl


INGREDIENTS
  • ½ cup Quinoa
  • 80 g Traditional biltong
  • 1 large Sliced Yellow pepper
  • 1 large Thickly chopped red onion
  • 50 g Thickly chopped Mushroom
  • 50 g Halved cherry tomatoes
  • 1 tbsp Crushed garlic or garlic and chilli sauce
  • 40 g Thinly sliced Red pepper
  • 40 g Grated carrots
  • 1 tbsp Garlic & herb spice
  • 4 tbsp Parmesan cheese
  • 1 handful Basil
  • 1 tbsp Olive or almond oil
INSTRUCTIONS
  1. Pre heat your oven to 180°C
  2. In a saucepan, add ½ cup of raw quinoa and 1½ cups of water and bring to boil. Cover the saucepan and reduce the heat to simmer for 10minutes. Then turn the heat off and leave the lid on, then allow the quinoa to sit on the hob for a further 5-7 minutes.
  3. In an oven dish, add your yellow pepper, onion, mushroom and garlic, then add your oil, garlic & herb spice and combine until all is coated with the oil.
  4. Place in the oven and cook for 10min.
  5. After 10min remove the dish from the oven and add your tomatoes, combine and return to the oven to cook for another 15min.
  6. Remove the veggies from the oven and add your red pepper, carrots, cooked quinoa, basil, Parmesan and biltong. Combine all the ingredients well, and serve.
